Description

Delicious, savory bread loaded with shredded zucchini and cheese, perfect for snacking or as a side dish.


Ingredients

  • 2 cups shredded zucchini, drained
  • 2 cups all-purpose flour
  • 1½ cups shredded cheddar cheese
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • 2 large eggs
  • ½ cup vegetable oil
  • ½ cup buttermilk


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a large bowl, whisk flour, baking powder, baking soda, salt, garlic powder, and black pepper.
  3. In another bowl, whisk eggs, oil, and buttermilk together. Stir in zucchini and cheese.
  4. Add wet ingredients to dry ingredients, stirring just until combined.
  5. Pour batter into prepared loaf pan.
  6. Bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow bread to cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
