Italian Dressing
- 1 recipe homemade Italian Dressing
Pasta and Vegetables
- 1 lb. rotini pasta
- 1 pint cherry tomatoes, halved
- 1 cup black olives, drained and halved
- 1 orange bell pepper, chopped
- 1 green bell pepper, chopped
- ½ cup finely diced red onion
- 2 tablespoons chopped pepperoncini
Meats and Cheese
- 3.5-4 oz. pepperoni, quartered (about ¾ cup)
- 4 oz. sliced salami, quartered (about ¾ cup)
- 8 oz. fresh mozzarella pearls
Garnishes
- Parmesan cheese, for garnish
- Fresh parsley, chopped, for garnish
Instructions
- Prepare the Dressing: Make the homemade Italian dressing as per your recipe instructions. Once prepared, refrigerate it until you’re ready to use. Before adding to the salad, give the dressing a good shake to recombine the flavors thoroughly.
- Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the rotini pasta and cook it according to the package directions until it is al dente, approximately 7 minutes. Drain the pasta well and transfer it to a large mixing bowl while still warm.
- Toss with Dressing: Immediately pour half of the prepared Italian dressing over the warm pasta. Toss the pasta gently but thoroughly to coat every piece with dressing, allowing the pasta to absorb the vibrant flavors.
- Add Remaining Ingredients: To the dressed pasta, add the halved cherry tomatoes, black olives, chopped orange and green bell peppers, diced red onion, chopped pepperoncini, quartered pepperoni and salami, and fresh mozzarella pearls. Gently toss all the ingredients together until evenly combined.
- Chill: Cover the bowl with plastic wrap or a lid and place it in the refrigerator. Let the salad chill for at least 30 minutes, allowing the flavors to meld beautifully. For best flavor, you can refrigerate it up to 24 hours before serving.
- Finish and Serve: When ready to serve, toss the salad once more with the remaining Italian dressing to freshen the flavors. Garnish with freshly chopped parsley and a generous sprinkle of grated Parmesan cheese. Serve the pasta salad chilled for a refreshing and zesty dish.
