Description

Zero Point Cabbage Soup is a light, nourishing, and satisfying soup loaded with fresh vegetables—perfect for a healthy meal plan or Weight Watchers-friendly option.


Ingredients

  • 1/2 head green cabbage, chopped
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 zucchini, chopped
  • 1 green bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups vegetable broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp thyme
  • Salt and pepper to taste
  • Optional: red pepper flakes for heat, fresh parsley for garnish


Instructions

  1. In a large pot, sauté onion, celery, and carrots over medium heat for 5 minutes, until softened.
  2. Add garlic, zucchini, bell pepper, and cabbage. Cook for another 5 minutes, stirring occasionally.
  3. Stir in diced tomatoes, vegetable broth, basil, oregano, thyme, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 25–30 minutes, until vegetables are tender.
  5. Taste and adjust seasoning. Serve hot, garnished with fresh parsley if desired.
