Description
A hearty and comforting winter soup packed with seasonal vegetables and warming spices, perfect for chilly days.
Ingredients
- 2 tbsp olive oil
- 1 large onion, chopped
- 2 garlic cloves, minced
- 3 carrots, diced
- 2 celery stalks, diced
- 2 potatoes, peeled and cubed
- 1 parsnip, diced
- 1 small butternut squash, peeled and cubed
- 6 cups vegetable broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp ground nutmeg
- Salt and pepper, to taste
- 2 cups kale, chopped
- 1/4 cup fresh parsley, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and sauté for 5 minutes until translucent.
- Stir in garlic and cook for another minute.
- Add carrots, celery, potatoes, parsnip, and butternut squash. Stir to combine.
- Pour in the vegetable broth and add thyme, rosemary, nutmeg, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 25-30 minutes, until vegetables are tender.
- Stir in chopped kale and cook for an additional 5 minutes.
- Remove from heat and garnish with fresh parsley before serving.
Notes
- For extra protein, add a can of drained chickpeas.
- Use sweet potatoes instead of regular potatoes for a different flavor.
- Soup can be blended for a smoother texture if desired.
