Description

A hearty and comforting winter soup packed with seasonal vegetables and warming spices, perfect for chilly days.


Ingredients

  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 3 carrots, diced
  • 2 celery stalks, diced
  • 2 potatoes, peeled and cubed
  • 1 parsnip, diced
  • 1 small butternut squash, peeled and cubed
  • 6 cups vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp ground nutmeg
  • Salt and pepper, to taste
  • 2 cups kale, chopped
  • 1/4 cup fresh parsley, chopped


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté for 5 minutes until translucent.
  3. Stir in garlic and cook for another minute.
  4. Add carrots, celery, potatoes, parsnip, and butternut squash. Stir to combine.
  5. Pour in the vegetable broth and add thyme, rosemary, nutmeg, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 25-30 minutes, until vegetables are tender.
  7. Stir in chopped kale and cook for an additional 5 minutes.
  8. Remove from heat and garnish with fresh parsley before serving.

Notes

  • For extra protein, add a can of drained chickpeas.
  • Use sweet potatoes instead of regular potatoes for a different flavor.
  • Soup can be blended for a smoother texture if desired.
