Instructions
- Place the cubed watermelon on a baking sheet and freeze for at least 2 hours or until solid.
- In a small saucepan, combine sugar and water. Heat over medium heat, stirring until sugar dissolves completely. Let cool.
- Add the frozen watermelon, cooled sugar syrup, and lime juice to a blender or food processor.
- Blend until smooth and creamy.
- Pour the mixture into a loaf pan or airtight container and freeze for 2-3 hours until firm.
- Let sit at room temperature for 5-10 minutes before scooping and serving.
