Instructions

  1. Prepare the Batter: Combine the sweet corn, egg, all-purpose flour, salt, and granulated sugar in a blender. Blend until the mixture is mostly smooth but still has some texture to maintain a pleasant bite in the pancakes.
  2. Heat the Skillet: Place a skillet over medium heat and add the vegetable oil, allowing it to heat until shimmering but not smoking. This will help cook the cachapas evenly and create a golden crust.
  3. Cook the Cachapas: Pour approximately 60 ml (about 1/4 cup) of the batter onto the skillet for each cachapa, spreading it gently into a round shape. Cook for 3-4 minutes on one side until golden brown, then flip and cook the other side for another 3-4 minutes.
