Description

Tortitas de papa are Mexican-style mashed potato patties, lightly fried and perfect as a side dish or main meal.


Ingredients

  • 4 large potatoes, peeled and chopped
  • 2 eggs
  • 1/2 cup grated cheese (optional)
  • 1/4 cup chopped fresh parsley or cilantro
  • 1/2 cup breadcrumbs
  • Salt and pepper to taste
  • Vegetable oil for frying


Instructions

  1. Boil the potatoes in salted water until tender, about 20 minutes. Drain and mash them in a large bowl.
  2. Add eggs, cheese (if using), parsley, salt, and pepper to the mashed potatoes. Mix well.
  3. Form the mixture into small patties (tortitas).
  4. Coat each tortita in breadcrumbs.
  5. Heat oil in a skillet over medium heat. Fry the patties until golden brown on both sides, about 3–4 minutes per side.
  6. Drain on paper towels and serve warm.

Notes

  • You can add chopped onions or garlic for extra flavor.
  • Great for using leftover mashed potatoes.
  • Serve with salsa, sour cream, or a side salad.
