Description
Tortitas de papa are Mexican-style mashed potato patties, lightly fried and perfect as a side dish or main meal.
Ingredients
- 4 large potatoes, peeled and chopped
- 2 eggs
- 1/2 cup grated cheese (optional)
- 1/4 cup chopped fresh parsley or cilantro
- 1/2 cup breadcrumbs
- Salt and pepper to taste
- Vegetable oil for frying
Instructions
- Boil the potatoes in salted water until tender, about 20 minutes. Drain and mash them in a large bowl.
- Add eggs, cheese (if using), parsley, salt, and pepper to the mashed potatoes. Mix well.
- Form the mixture into small patties (tortitas).
- Coat each tortita in breadcrumbs.
- Heat oil in a skillet over medium heat. Fry the patties until golden brown on both sides, about 3–4 minutes per side.
- Drain on paper towels and serve warm.
Notes
- You can add chopped onions or garlic for extra flavor.
- Great for using leftover mashed potatoes.
- Serve with salsa, sour cream, or a side salad.
