Description

A quick and delicious pasta dish featuring juicy shrimp, fresh spinach, and sweet cherry tomatoes tossed in garlic olive oil — perfect for a healthy weeknight dinner.


Ingredients

  • 8 oz (225g) linguine or spaghetti
  • 1 lb (450g) large shrimp, peeled and deveined
  • 2 cups fresh baby spinach
  • 1 pint cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/4 cup grated Parmesan cheese
  • 1/4 tsp red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 1 tbsp fresh lemon juice


Instructions

  1. Bring a large pot of salted water to a boil and cook pasta according to package directions. Reserve 1/2 cup pasta water, then drain.
  2. Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 1 minute until fragrant.
  3. Add shrimp, season with salt, pepper, and red pepper flakes. Cook for 2-3 minutes per side until shrimp are pink and opaque.
  4. Add cherry tomatoes and cook for 2-3 minutes until softened.
  5. Add cooked pasta, spinach, and reserved pasta water. Toss until spinach wilts and everything is well combined.
  6. Stir in fresh lemon juice and sprinkle with grated Parmesan cheese.
  7. Serve immediately with extra Parmesan if desired.

Notes

  • Use whole wheat or gluten-free pasta if preferred.
  • Swap shrimp for chicken or tofu for variation.
