A quick and delicious pasta dish featuring juicy shrimp, fresh spinach, and sweet cherry tomatoes tossed in garlic olive oil — perfect for a healthy weeknight dinner.
Ingredients
- 8 oz (225g) linguine or spaghetti
- 1 lb (450g) large shrimp, peeled and deveined
- 2 cups fresh baby spinach
- 1 pint cherry tomatoes, halved
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1/4 cup grated Parmesan cheese
- 1/4 tsp red pepper flakes (optional)
- Salt and black pepper, to taste
- 1 tbsp fresh lemon juice
Instructions
- Bring a large pot of salted water to a boil and cook pasta according to package directions. Reserve 1/2 cup pasta water, then drain.
- Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 1 minute until fragrant.
- Add shrimp, season with salt, pepper, and red pepper flakes. Cook for 2-3 minutes per side until shrimp are pink and opaque.
- Add cherry tomatoes and cook for 2-3 minutes until softened.
- Add cooked pasta, spinach, and reserved pasta water. Toss until spinach wilts and everything is well combined.
- Stir in fresh lemon juice and sprinkle with grated Parmesan cheese.
- Serve immediately with extra Parmesan if desired.

- Use whole wheat or gluten-free pasta if preferred.
- Swap shrimp for chicken or tofu for variation.
