Ingredients
Scale
Crust
- 4 medium flour tortillas (or corn tortillas for a gluten-free option)
Filling
- 6 large eggs
- 1 cup milk (or dairy-free milk alternative)
- 1 cup shredded cheese (cheddar, mozzarella, or your choice)
- 1/2 cup diced bell peppers
- 1/2 cup chopped spinach
- 1/4 cup diced onions
- 1/2 cup cooked and crumbled beef or chicken sausage (optional)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon smoked paprika (optional)
Garnish
- Fresh parsley or chives for garnish
Instructions
- Preheat oven: Preheat your oven to 375°F (190°C) to prepare for baking the quiche.
- Prepare the tortilla crust: Lightly grease a 9-inch pie dish to prevent sticking. Arrange the tortillas to cover the bottom and sides of the dish, trimming any overhanging edges. For a crispier crust, pre-bake the tortilla-lined dish for 5 minutes.
- Make the egg mixture: In a large bowl, whisk together the eggs, milk, garlic powder, salt, black pepper, and smoked paprika until well combined, forming the quiche custard base.
- Assemble the quiche: Evenly scatter the diced bell peppers, chopped spinach, diced onions, and cooked sausage over the tortilla crust. Pour the prepared egg mixture over the vegetables and meat, then sprinkle the shredded cheese evenly on top.
- Bake: Place the quiche in the preheated oven and bake for 30 to 35 minutes, or until the center is firmly set and the edges are nicely golden brown.
- Cool and Serve: Remove the quiche from the oven and let it rest for 5 to 10 minutes to allow slicing cleanly. Garnish with fresh parsley or chives and serve warm for best flavor.
Notes
- For a gluten-free version, use corn tortillas instead of flour tortillas.
- You can substitute the sausage with other cooked meats or omit it for a vegetarian option.
- If you prefer a dairy-free version, use a plant-based milk and cheese alternative.
- Pre-baking the tortillas helps create a crispier crust but is optional based on your texture preference.
- Customize the vegetables to your taste; mushrooms, tomatoes, or zucchini also work well.
