- 24 chocolate sandwich cookies, crushed
- 5 tbsp unsalted butter, melted
- 1/2 cup unsalted butter
- 2 oz unsweetened chocolate, chopped
- 1 cup granulated sugar
- 2 large eggs
- 1/2 tsp vanilla extract
- 1/4 tsp salt
- 1/2 cup all-purpose flour
- 1/4 cup cocoa powder
- 1/4 cup cornstarch
- 2/3 cup granulated sugar
- 1/4 tsp salt
- 2 1/2 cups whole milk
- 4 oz semisweet chocolate, chopped
- 4 large egg yolks
- 1 tsp vanilla extract
- 1 cup heavy cream
- 2 tbsp powdered sugar
- Chocolate shavings or cocoa powder, for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C). Combine crushed cookies and melted butter, then press into a 9-inch pie dish. Bake for 10 minutes and let cool.
- To make the brownie layer, melt butter and unsweetened chocolate in a saucepan over low heat. Remove from heat and stir in sugar, eggs, vanilla, salt, flour, and cocoa powder. Pour into the crust and bake for 20-25 minutes. Let cool completely.
- For the pudding layer, whisk cornstarch, sugar, salt, and milk in a saucepan. Add chopped semisweet chocolate and cook over medium heat until thickened. Whisk egg yolks separately, then temper with a bit of the hot mixture before combining fully. Cook for 2 more minutes, then remove from heat and add vanilla. Let cool slightly before pouring over the brownie layer. Chill for at least 2 hours.
- Whip heavy cream with powdered sugar until stiff peaks form. Spread over chilled pudding layer.
- Garnish with chocolate shavings or cocoa powder if desired. Chill until ready to serve.
