  • 1/4 tsp salt
  • 1/2 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/4 cup cornstarch
  • 2/3 cup granulated sugar
  • 1/4 tsp salt
  • 2 1/2 cups whole milk
  • 4 oz semisweet chocolate, chopped
  • 4 large egg yolks
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • Chocolate shavings or cocoa powder, for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Combine crushed cookies and melted butter, then press into a 9-inch pie dish. Bake for 10 minutes and let cool.
  2. To make the brownie layer, melt butter and unsweetened chocolate in a saucepan over low heat. Remove from heat and stir in sugar, eggs, vanilla, salt, flour, and cocoa powder. Pour into the crust and bake for 20-25 minutes. Let cool completely.
  3. For the pudding layer, whisk cornstarch, sugar, salt, and milk in a saucepan. Add chopped semisweet chocolate and cook over medium heat until thickened. Whisk egg yolks separately, then temper with a bit of the hot mixture before combining fully. Cook for 2 more minutes, then remove from heat and add vanilla. Let cool slightly before pouring over the brownie layer. Chill for at least 2 hours.
