- 1/4 cup unsalted chopped peanuts (optional)
- 1 head butter lettuce or Bibb lettuce, leaves separated
For the Sauce
- 3 tablespoons soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon fish sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sriracha (optional)
- 1 teaspoon honey
- Juice of 1/2 lime
Instructions
- Prepare the Sauce: In a small bowl, whisk together soy sauce, hoisin sauce, fish sauce, rice vinegar, sriracha (if using), honey, and lime juice until well combined. Set aside.
- Cook the Chicken: Heat the sesame oil in a large skillet over medium heat. Add the ground chicken and cook for 4–5 minutes, breaking it up with a spoon, until it is no longer pink and cooked through.
- Add Aromatics: Stir in the minced garlic and grated ginger, cooking for 1 minute until fragrant and aromatic, being careful not to burn the garlic.
- Cook Vegetables: Add the finely diced red bell pepper and shredded carrots to the skillet. Cook for an additional 2–3 minutes until the vegetables are slightly softened but still crisp.
- Add Sauce and Simmer: Pour the prepared sauce over the chicken and vegetables. Stir to evenly coat all ingredients. Allow the mixture to simmer for 2–3 minutes until the sauce thickens slightly and flavors meld together.
- Finish the Filling: Remove the skillet from heat. Stir in the chopped green onions, cilantro, and chopped peanuts if using, mixing gently to combine.
- Assemble and Serve: Spoon the flavorful chicken mixture into individual butter lettuce leaves. Serve immediately, optionally with extra lime wedges and sriracha on the side for added flavor and heat.
