- 2 large sweet potatoes, peeled and diced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 4 large whole wheat tortillas
- 1 cup baby spinach
- 1/2 cup shredded carrots
- 1/2 cup hummus
- 1/4 cup crumbled feta cheese (optional)
- 1 avocado, sliced
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, toss diced sweet potatoes with olive oil, paprika, cumin, salt, and pepper.
- Spread sweet potatoes on a baking sheet and roast for 20-25 minutes, until tender and slightly crispy.
- Warm the tortillas in a dry skillet or microwave.
- Spread hummus over each tortilla.
- Layer with spinach, roasted sweet potatoes, shredded carrots, avocado slices, and feta cheese if using.
- Roll up the tortillas tightly into wraps.
- Slice in half and serve immediately or wrap in foil for later.
Notes
- For a vegan version, omit the feta cheese or use a plant-based alternative.
- Try adding other veggies like cucumbers, bell peppers, or red onions.
- Sweet potatoes can be roasted ahead of time and stored in the fridge for quick assembly.
