Description

Delicious and healthy sweet potato wraps filled with roasted sweet potatoes and fresh vegetables, perfect for a light meal or snack.


Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 4 large whole wheat tortillas
  • 1 cup baby spinach
  • 1/2 cup shredded carrots
  • 1/2 cup hummus
  • 1/4 cup crumbled feta cheese (optional)
  • 1 avocado, sliced

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, toss diced sweet potatoes with olive oil, paprika, cumin, salt, and pepper.
  3. Spread sweet potatoes on a baking sheet and roast for 20-25 minutes, until tender and slightly crispy.
  4. Warm the tortillas in a dry skillet or microwave.
  5. Spread hummus over each tortilla.
  6. Layer with spinach, roasted sweet potatoes, shredded carrots, avocado slices, and feta cheese if using.
  7. Roll up the tortillas tightly into wraps.
  8. Slice in half and serve immediately or wrap in foil for later.

Notes

  • For a vegan version, omit the feta cheese or use a plant-based alternative.
  • Try adding other veggies like cucumbers, bell peppers, or red onions.
  • Sweet potatoes can be roasted ahead of time and stored in the fridge for quick assembly.
