- 2 cups rolled oats
- 1/2 cup almonds, chopped
- 1/2 cup walnuts, chopped
- 1/2 cup dried cranberries
- 1/4 cup raisins
- 1/4 cup chopped dates
- 1/4 cup sunflower seeds
- 1/4 cup pumpkin seeds
- 1/2 cup honey or maple syrup
- 1/4 cup natural peanut butter or almond butter
- 1/2 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
- In a large bowl, combine oats, almonds, walnuts, cranberries, raisins, dates, sunflower seeds, and pumpkin seeds.
- In a small saucepan over low heat, warm the honey (or maple syrup), peanut butter, vanilla extract, and salt until melted and combined.
- Pour the wet mixture over the dry ingredients and mix well until evenly coated.
- Transfer the mixture into the prepared baking dish and press down firmly to flatten.
- Bake for 15–20 minutes, or until the edges are golden brown.
- Remove from oven and let cool completely before slicing into bars.
Notes
- Store in an airtight container at room temperature for up to a week or refrigerate for longer shelf life.
- You can swap in any nuts or dried fruits you prefer.
- For a vegan option, use maple syrup instead of honey.
