Description

Delightfully festive and easy-to-make Sugar Cookie Rice Krispies treats combine the buttery flavor of sugar cookie mix with the classic marshmallow and crispy cereal texture. Perfect for holiday gatherings or a sweet treat anytime, these no-bake bars are topped with colorful sprinkles and mini marshmallows for extra fun and flavor.

Ingredients

Scale

Base Mixture

  • ½ cup butter
  • ½ cup sugar cookie mix (dry mix from the pouch)
  • 1 bag marshmallows (10 ounces, about 40 large marshmallows)
  • 6 cups Rice Krispies Cereal

Toppings

  • â…“ cup mini marshmallows
  • 2 tbsp sprinkles (Christmas or other color)
  • Additional sprinkles for decoration

Instructions

  1. Prepare the pan: Grease a 9″x13″ baking tray with cooking spray or line it with parchment paper to prevent sticking.
  2. Melt butter and cookie mix: Place a large pot on low heat and melt the ½ cup butter. Stir in the ½ cup sugar cookie mix and cook continuously for 1 minute to combine flavors.
  3. Add marshmallows: Add the entire 10-ounce bag of large marshmallows to the pot and stir continuously until the marshmallows are fully melted and smoothly incorporated with the butter and sugar cookie mix.
  4. Mix in cereal: Remove the pot from heat. Gently fold in the 6 cups of Rice Krispies Cereal using a spatula or wooden spoon. To reduce sticking, spray the utensil with cooking spray beforehand.
  5. Add mini marshmallows and sprinkles: Stir in the â…“ cup mini marshmallows and 2 tablespoons of sprinkles. Some mini marshmallows will melt slightly while others remain whole, adding texture.
  6. Shape the treats: Transfer the mixture into the prepared pan and gently spread it into an even layer. Press down just enough to form a flat surface but avoid compacting it too much to keep the treats light and airy.
  7. Decorate: Sprinkle additional sprinkles on top for a festive finish.
  8. Set and serve: Allow the mixture to cool and set for 30 minutes at room temperature. Once firm, cut into 18 or 24 squares. Serve and enjoy your delicious sugar cookie-inspired Rice Krispies treats!

Notes

  • For easier mixing, lightly spray your spatula or spoon with cooking spray to prevent sticking.
  • Do not press down the mixture too firmly when spreading in the pan to maintain a light texture.
  • Feel free to customize sprinkles colors to match any occasion or holiday theme.
  • Store leftovers in an airtight container at room temperature for up to 3 days for best freshness.
