Ingredients

  • 6 cups fresh baby spinach
  • 2 cups sliced fresh strawberries
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sliced red onions
  • 1/4 cup chopped pecans or walnuts (toasted optional)
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste


Instructions

  1. In a large bowl, combine the baby spinach, sliced strawberries, red onions, and nuts.
  2. In a small bowl or jar, whisk together the balsamic vinegar, olive oil, honey, Dijon mustard, salt, and pepper until well combined.
