Ingredients
- 6 cups fresh baby spinach
- 2 cups sliced fresh strawberries
- 1/2 cup crumbled feta cheese
- 1/4 cup sliced red onions
- 1/4 cup chopped pecans or walnuts (toasted optional)
- 2 tablespoons balsamic vinegar
- 1 tablespoon olive oil
- 1 tablespoon honey or maple syrup
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- In a large bowl, combine the baby spinach, sliced strawberries, red onions, and nuts.
- In a small bowl or jar, whisk together the balsamic vinegar, olive oil, honey, Dijon mustard, salt, and pepper until well combined.
- Drizzle the dressing over the salad and toss gently to coat all the ingredients evenly.
- Top the salad with crumbled feta cheese before serving.
- Serve immediately and enjoy fresh.
Notes
- You can add grilled chicken for extra protein.
- Goat cheese can be used instead of feta.
- For a vegan version, use maple syrup and omit the cheese or use vegan cheese.
