Instructions
- Preheat Oven and Prepare Pans: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper to prevent sticking and ensure easy cleanup.
- Mix Dry Ingredients: In a bowl, whisk together the all-purpose flour, baking powder, and salt. Set this mixture aside for later.
- Cream Butter and Sugar: Using a mixer, cream the softened unsalted butter and granulated sugar together until the mixture becomes light and fluffy, which helps create a tender cookie texture.
- Add Egg and Vanilla: Beat in the egg and vanilla extract into the creamed mixture until fully combined and smooth.
- Combine Dry and Wet Ingredients: Gradually add the dry flour mixture into the wet ingredients, mixing until a dough forms. Be careful not to overmix.
- Roll and Cut Dough: Roll out the dough on a lightly floured surface to about ¼ inch thickness. Cut the dough into rectangles or your preferred shapes. Place half of the shapes onto the prepared baking sheets.
- Add Strawberry Jam: Spoon a small amount of strawberry jam into the center of each dough shape on the baking sheet to create the filling.
- Seal and Decorate: Top each jam-covered dough shape with another dough piece. Press the edges gently to seal the jam inside. Use a fork to crimp the edges for both decoration and to ensure the filling stays contained during baking.
