Description

Strawberry Poke Cake is a light and refreshing dessert made with white cake, strawberry gelatin, and whipped topping—perfect for spring and summer gatherings.

Ingredients

  • 1 box white cake mix (plus ingredients listed on the box: eggs, oil, water)
  • 1 package (3 oz) strawberry-flavored gelatin
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 container (8 oz) whipped topping (e.g., Cool Whip), thawed
  • 1 cup fresh strawberries, sliced (optional for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Prepare the white cake mix according to package instructions and bake in a 9×13 inch pan.
  2. Allow the cake to cool for about 15 minutes. Using a fork or the handle of a wooden spoon, poke holes all over the cake.
  3. In a bowl, dissolve the strawberry gelatin in 1 cup boiling water. Stir in 1/2 cup cold water.
  4. Pour the gelatin mixture evenly over the cake, making sure it seeps into the holes.
  5. Refrigerate the cake for at least 2 hours to allow the gelatin to set.
  6. Spread whipped topping over the chilled cake.
  7. Top with sliced fresh strawberries if desired. Serve chilled.

Notes

  • You can substitute vanilla cake mix for white cake mix if preferred.
  • Use sugar-free gelatin and light whipped topping for a lower-calorie version.
  • Decorate with additional fruits like blueberries for a patriotic theme.
