Strawberry Poke Cake is a light and refreshing dessert made with white cake, strawberry gelatin, and whipped topping—perfect for spring and summer gatherings.
Ingredients
- 1 box white cake mix (plus ingredients listed on the box: eggs, oil, water)
- 1 package (3 oz) strawberry-flavored gelatin
- 1 cup boiling water
- 1/2 cup cold water
- 1 container (8 oz) whipped topping (e.g., Cool Whip), thawed
- 1 cup fresh strawberries, sliced (optional for topping)
Instructions
- Preheat oven to 350°F (175°C). Prepare the white cake mix according to package instructions and bake in a 9×13 inch pan.
- Allow the cake to cool for about 15 minutes. Using a fork or the handle of a wooden spoon, poke holes all over the cake.
- In a bowl, dissolve the strawberry gelatin in 1 cup boiling water. Stir in 1/2 cup cold water.
- Pour the gelatin mixture evenly over the cake, making sure it seeps into the holes.
- Refrigerate the cake for at least 2 hours to allow the gelatin to set.
- Spread whipped topping over the chilled cake.
- Top with sliced fresh strawberries if desired. Serve chilled.
