Description

These Strawberry Oatmeal Bars are a wholesome, fruity treat made with layers of oats and a sweet strawberry filling. Perfect for breakfast, snacks, or dessert!


Ingredients

  • 1 1/2 cups old-fashioned rolled oats
  • 1 1/4 cups all-purpose flour
  • 1/2 cup light brown sugar, packed
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 3/4 cup unsalted butter, melted
  • 3/4 cup strawberry jam or preserves
  • 1/2 cup fresh strawberries, chopped
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, combine oats, flour, brown sugar, baking soda, salt, and cinnamon.
  3. Pour in the melted butter and mix until crumbly and well combined.
  4. Press about two-thirds of the oat mixture into the bottom of the prepared pan to form the crust.
  5. In a small bowl, stir together strawberry jam, chopped strawberries, lemon juice, and vanilla extract.
  6. Spread the strawberry mixture evenly over the crust.
  7. Sprinkle the remaining oat mixture over the top and gently press down.
  8. Bake for 30–35 minutes or until the top is golden brown and the filling is bubbly.
  9. Allow to cool completely in the pan before slicing into bars.

Notes

  • Use any berry jam you prefer if you don’t have strawberry.
  • For a firmer bar, refrigerate before slicing.
  • Store bars in an airtight container for up to 5 days.
