These Strawberry Oatmeal Bars are a wholesome, fruity treat made with layers of oats and a sweet strawberry filling. Perfect for breakfast, snacks, or dessert!

- 1 1/2 cups old-fashioned rolled oats
- 1 1/4 cups all-purpose flour
- 1/2 cup light brown sugar, packed
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 3/4 cup unsalted butter, melted
- 3/4 cup strawberry jam or preserves
- 1/2 cup fresh strawberries, chopped
- 1 teaspoon lemon juice
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a large bowl, combine oats, flour, brown sugar, baking soda, salt, and cinnamon.
- Pour in the melted butter and mix until crumbly and well combined.
- Press about two-thirds of the oat mixture into the bottom of the prepared pan to form the crust.
- In a small bowl, stir together strawberry jam, chopped strawberries, lemon juice, and vanilla extract.
- Spread the strawberry mixture evenly over the crust.
- Sprinkle the remaining oat mixture over the top and gently press down.
- Bake for 30–35 minutes or until the top is golden brown and the filling is bubbly.
- Allow to cool completely in the pan before slicing into bars.
Notes
- Use any berry jam you prefer if you don’t have strawberry.
- For a firmer bar, refrigerate before slicing.
- Store bars in an airtight container for up to 5 days.
