- 2 pounds fresh strawberries, hulled and halved
- 4 cups granulated sugar
- 1/4 cup lemon juice
Instructions
- Place the strawberries in a large bowl and mash them slightly with a potato masher or fork.
- Transfer the mashed strawberries to a large saucepan and add the sugar and lemon juice.
- Stir over low heat until the sugar is completely dissolved.
- Increase the heat to high and bring the mixture to a rolling boil.
- Boil, stirring frequently, until the mixture reaches 220°F (105°C) on a candy thermometer, about 20-25 minutes.
- Remove from heat and skim off any foam from the surface.
- Ladle the hot jam into sterilized jars, leaving 1/4-inch headspace. Wipe the rims, seal, and process in a boiling water bath for 10 minutes, or store in the refrigerator if using immediately.
Notes
- Use fully ripe strawberries for best flavor.
- You can adjust the sugar amount depending on your sweetness preference.
- Store in a cool, dark place for up to 1 year if sealed properly.
