Description

A sweet and tangy homemade strawberry jam made with fresh strawberries, perfect for spreading on toast or using in desserts.

Ingredients

Units Scale
  • 2 pounds fresh strawberries, hulled and halved
  • 4 cups granulated sugar
  • 1/4 cup lemon juice

Instructions

  1. Place the strawberries in a large bowl and mash them slightly with a potato masher or fork.
  2. Transfer the mashed strawberries to a large saucepan and add the sugar and lemon juice.
  3. Stir over low heat until the sugar is completely dissolved.
  4. Increase the heat to high and bring the mixture to a rolling boil.
  5. Boil, stirring frequently, until the mixture reaches 220°F (105°C) on a candy thermometer, about 20-25 minutes.
  6. Remove from heat and skim off any foam from the surface.
  7. Ladle the hot jam into sterilized jars, leaving 1/4-inch headspace. Wipe the rims, seal, and process in a boiling water bath for 10 minutes, or store in the refrigerator if using immediately.

Notes

  • Use fully ripe strawberries for best flavor.
  • You can adjust the sugar amount depending on your sweetness preference.
  • Store in a cool, dark place for up to 1 year if sealed properly.
