- 1 9-inch graham cracker pie crust
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1/2 tsp vanilla extract
- 1 cup heavy whipping cream
- 1 lb fresh strawberries, hulled and halved
- 1/2 cup granulated sugar
- 2 tbsp cornstarch
- 1/2 cup water
- 1 tbsp lemon juice
Instructions
- In a mixing bowl, beat the cream cheese until smooth.
- Add powdered sugar and vanilla extract, and mix until combined.
- In a separate bowl, whip the heavy cream until stiff peaks form. Fold into the cream cheese mixture.
- Spoon the cream cheese filling into the graham cracker crust and spread evenly. Refrigerate for at least 1 hour.
- Meanwhile, in a saucepan, combine granulated sugar and cornstarch. Add water and lemon juice and stir well.
- Cook over medium heat, stirring constantly until mixture thickens and becomes translucent.
- Remove from heat and let the glaze cool for 10 minutes.
- Arrange strawberries on top of the chilled cream cheese layer.
- Spoon the glaze evenly over the strawberries.
- Chill the pie for at least 2 hours or until set before serving.
Notes
- Use room temperature cream cheese for a smoother filling.
- You can use store-bought glaze for convenience.
- For best results, serve within 24 hours of assembly.
