Description

This Strawberry Cream Cheese Pie is a refreshing and decadent dessert featuring a creamy cheesecake layer topped with sweet glazed strawberries, all nestled in a buttery graham cracker crust.

  • 1 9-inch graham cracker pie crust
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 1 lb fresh strawberries, hulled and halved
  • 1/2 cup granulated sugar
  • 2 tbsp cornstarch
  • 1/2 cup water
  • 1 tbsp lemon juice

Instructions

  1. In a mixing bowl, beat the cream cheese until smooth.
  2. Add powdered sugar and vanilla extract, and mix until combined.
  3. In a separate bowl, whip the heavy cream until stiff peaks form. Fold into the cream cheese mixture.
  4. Spoon the cream cheese filling into the graham cracker crust and spread evenly. Refrigerate for at least 1 hour.
  5. Meanwhile, in a saucepan, combine granulated sugar and cornstarch. Add water and lemon juice and stir well.
  6. Cook over medium heat, stirring constantly until mixture thickens and becomes translucent.
  7. Remove from heat and let the glaze cool for 10 minutes.
  8. Arrange strawberries on top of the chilled cream cheese layer.
  9. Spoon the glaze evenly over the strawberries.
  10. Chill the pie for at least 2 hours or until set before serving.
