Description

These Strawberry Breakfast Popsicles are a refreshing and healthy way to start your day or enjoy a nutritious snack. Made with fresh strawberries, creamy Greek yogurt, and a touch of honey, they are packed with flavor and natural sweetness.   • 2 cups fresh or frozen strawberries (hulled)
  • 1 cup Greek yogurt (plain or vanilla)
  • 1/4 cup milk (dairy or plant-based)
  • 2–3 tablespoons honey or maple syrup (adjust to taste)
  • 1/2 teaspoon vanilla extract
  • 1/3 cup granola (plus more for topping, optional)


Instructions

  1. Blend Ingredients: In a blender, combine the strawberries, Greek yogurt, milk, honey or maple syrup, and vanilla extract. Blend until the mixture is smooth and well combined.
  2. Stir in Granola: Remove the blended mixture from the blender and stir in the granola by hand to maintain its crunch and texture.
  3. Fill Molds: Pour the mixture into popsicle molds, leaving a little space at the top to allow for expansion during freezing.
  4. Add Toppings: Sprinkle extra granola on top of each filled mold, if desired, and gently press it down to help it stick.
  5. Insert Sticks and Freeze: Insert popsicle sticks into the molds and place them in the freezer. Freeze for at least 4–6 hours or until completely solid.
  6. Release Popsicles: To remove the popsicles from the molds, run the molds under warm water for a few seconds and gently pull the popsicles out.

Notes

  • Use silicone molds for easy release of the popsicles.
  • You can substitute other berries for strawberries or add a swirl of nut butter for a different flavor variation.
