Chicken and Marinade
- 1 1/2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 tablespoon vegetable oil
Sauce
- 3 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1/4 cup gochujang (Korean chili paste)
- 3 tablespoons honey
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1/4 cup water
Thickener
- 1 tablespoon cornstarch mixed with 1 tablespoon water
Garnish
- 1 tablespoon sesame seeds
- 2 green onions, sliced
Instructions
- Cook the Chicken: Heat the vegetable oil in a large skillet over medium-high heat. Add the bite-sized chicken thighs and cook for 5–7 minutes, until they are lightly browned and mostly cooked through. Remove the chicken from the skillet and set aside.
- Sauté Aromatics: Reduce the skillet heat to medium. Add the minced garlic and grated ginger to the skillet, cooking for about 30 seconds until fragrant, but not browned.
- Prepare Sauce: Stir in the gochujang, honey, soy sauce, rice vinegar, sesame oil, and water into the skillet with the aromatics. Bring the mixture to a simmer.
- Simmer Chicken in Sauce: Return the partially cooked chicken to the skillet, toss to coat it in the sauce. Continue cooking for another 5–6 minutes, stirring occasionally, until the chicken is fully cooked and well coated with the sauce.
- Thicken the Sauce: Stir in the cornstarch slurry (cornstarch mixed with water) and cook for an additional 1–2 minutes, stirring gently until the sauce thickens and becomes sticky.
- Finish and Serve: Remove the skillet from heat. Garnish the sticky honey gochujang chicken with sesame seeds and sliced green onions. Serve hot over steamed rice or noodles for a complete meal.

- Adjust the amount of gochujang to suit your preferred heat level.
- Chicken breasts can be used as an alternative, but thighs remain juicier and more flavorful.
