Description

A flavorful and satisfying Spicy Tuna Rice Bowl featuring spicy mayo tuna over a bed of rice with fresh vegetables and garnishes. Perfect for a quick and healthy meal.

Ingredients

Units Scale
  • 1 cup sushi rice
  • 1 1/4 cups water
  • 1 tbsp rice vinegar
  • 1/2 tsp sugar
  • 1/4 tsp salt
  • 1 can (5 oz) tuna, drained
  • 2 tbsp mayonnaise
  • 1 tbsp sriracha
  • 1 tsp soy sauce
  • 1/2 avocado, sliced
  • 1/2 cucumber, sliced
  • 1 small carrot, julienned
  • 1 tbsp sesame seeds
  • 1 sheet nori, cut into strips
  • 1 green onion, chopped

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear. Combine with water in a pot, bring to a boil, then reduce heat and simmer covered for 15 minutes. Let sit covered for 10 more minutes.
  2. Mix rice vinegar, sugar, and salt, then stir into the cooked rice. Let the rice cool slightly.
  3. In a bowl, mix the drained tuna with mayonnaise, sriracha, and soy sauce until well combined.
  4. Divide the seasoned rice into serving bowls.
  5. Top with spicy tuna, avocado, cucumber, and carrot.
  6. Garnish with sesame seeds, nori strips, and green onion.
  7. Serve immediately and enjoy!

Notes

  • Use fresh tuna instead of canned for a sashimi-style variation.
  • Adjust the sriracha to your preferred spice level.
  • Leftovers are best stored without the toppings to prevent sogginess.
