  • 1/2 cup all-purpose flour
  • 1/2 cup water
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and pepper, to taste
  • 2/3 cup buffalo sauce
  • 1 tbsp melted butter (optional)
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped red onion
  • 1/4 cup crumbled blue cheese or vegan alternative
  • 1/4 cup ranch or vegan ranch dressing
  • Fresh cilantro, for garnish

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, water, garlic powder, smoked paprika, salt, and pepper to form a batter.
  3. Add cauliflower florets to the batter, tossing to coat evenly.
  4. Arrange coated cauliflower on the baking sheet in a single layer and spray lightly with oil.
  5. Bake for 20 minutes, flipping halfway through for even crispiness.
  6. In a small bowl, mix buffalo sauce with melted butter if using.
  7. Remove cauliflower from oven, toss with buffalo sauce, and return to oven for another 10-15 minutes.
  8. Warm tortillas in a skillet or microwave.
  9. Assemble tacos by layering lettuce, buffalo cauliflower, tomatoes, onion, and blue cheese on each tortilla.
  10. Drizzle with ranch dressing and garnish with fresh cilantro before serving.

Notes
