Description

Spaghetti Aglio e Olio is a classic Italian pasta dish made with garlic, olive oil, and chili flakes for a simple yet flavorful meal.


Ingredients

  • 400g spaghetti
  • 6 cloves garlic, thinly sliced
  • 1/2 cup extra virgin olive oil
  • 1 tsp red chili flakes
  • Salt, to taste
  • Fresh parsley, chopped (optional, for garnish)
  • Grated Parmesan cheese (optional, for serving)

Instructions

  1. Bring a large pot of salted water to a boil and cook the spaghetti until al dente according to package instructions.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat.
  3. Add the sliced garlic and sauté until golden and fragrant, being careful not to burn it.
  4. Stir in the red chili flakes and cook for another 30 seconds.
  5. Drain the pasta, reserving about 1/2 cup of pasta water.
  6. Add the drained spaghetti to the skillet and toss to coat in the garlic oil mixture. Add reserved pasta water a little at a time if needed to help coat the pasta.
  7. Season with salt to taste and mix well.
  8. Serve hot, garnished with chopped parsley and grated Parmesan if desired.

Notes

  • Use high-quality olive oil for the best flavor.
  • Adjust the chili flakes to your heat preference.
  • Parmesan is optional; omit for a vegan version.
