- 2 cups cooked shredded chicken
- 4 oz cream cheese, softened
- 1/2 cup shredded cheddar cheese
- 1/2 cup canned corn, drained
- 1/2 cup black beans, rinsed and drained
- 1/4 cup diced red bell pepper
- 1/4 cup diced green onions
- 1/2 tsp chili powder
- 1/2 tsp ground cumin
- Salt and pepper to taste
- 4 large flour tortillas
- 1 tbsp olive oil (for grilling, optional)
Instructions
- In a large bowl, mix the cream cheese until smooth.
- Add in shredded chicken, cheddar cheese, corn, black beans, red bell pepper, green onions, chili powder, cumin, salt, and pepper. Mix well to combine.
- Lay out the tortillas and evenly divide the mixture among them.
- Roll up each tortilla tightly into a wrap.
- Optional: Heat a skillet over medium heat and brush with olive oil. Grill each wrap for 2-3 minutes per side until golden and crisp.
- Slice in half and serve warm.
Notes
- You can use rotisserie chicken for a quick prep option.
- Wraps can be made ahead and stored in the fridge for up to 2 days.
- Add jalapeños for extra spice.
