Description

Southern Tea Cakes are a traditional Southern treat with a soft, cake-like texture and a hint of vanilla, perfect for enjoying with a cup of tea or coffee.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg (optional)


Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together butter and sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, salt, and nutmeg.
  5. Gradually add dry ingredients to the wet mixture and mix until a soft dough forms.
  6. Roll dough into 1-inch balls and place on prepared baking sheet, spacing them about 2 inches apart.
  7. Flatten each ball slightly with the bottom of a glass or your palm.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Remove from oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Dough can be chilled for 30 minutes for easier handling.
  • For a twist, add lemon zest or almond extract.
  • Store in an airtight container for up to 5 days.
