Ingredients
- 4 cups fresh or frozen corn kernels
- 2 tablespoons butter
- 2 tablespoons bacon drippings or additional butter
- 1/2 cup chopped onion (optional)
- 1/4 cup heavy cream or milk (optional for creaminess)
- Salt to taste
- Black pepper to taste
- 1/2 teaspoon sugar (optional)
Instructions
- Heat a large cast iron skillet over medium heat and add the butter and bacon drippings.
- Once melted, add the chopped onion (if using) and cook until softened, about 3-4 minutes.
- Add the corn kernels to the skillet and stir well to coat with the fats.
- Cook, stirring occasionally, for 10-15 minutes until the corn begins to brown and caramelize.
- Add heavy cream or milk if a creamier texture is desired, and stir to combine.
- Season with salt, pepper, and sugar (if using), adjusting to taste.
- Continue cooking for another 2-3 minutes, then serve hot.
Notes
- Fresh corn yields the best flavor, but frozen works well when out of season.
- Adding a pinch of sugar enhances the natural sweetness of the corn.
- For extra flavor, you can stir in cooked crumbled bacon or a dash of smoked paprika.
