Description

Instructions

  1. Heat a large cast iron skillet over medium heat and add the butter and bacon drippings.
  2. Once melted, add the chopped onion (if using) and cook until softened, about 3-4 minutes.
  3. Add the corn kernels to the skillet and stir well to coat with the fats.
  4. Cook, stirring occasionally, for 10-15 minutes until the corn begins to brown and caramelize.
  5. Add heavy cream or milk if a creamier texture is desired, and stir to combine.
  6. Season with salt, pepper, and sugar (if using), adjusting to taste.
