Description

Shrimp Rolls on Brioche Buns are a delicious twist on classic lobster rolls, made with tender shrimp tossed in a light, creamy dressing and served in buttery toasted brioche buns. Perfect for a quick lunch or casual summer meal.


Ingredients

  • 1 lb cooked shrimp, peeled, deveined, and chopped
  • 1/4 cup mayonnaise
  • 1 tbsp fresh lemon juice
  • 1 tbsp fresh dill, chopped
  • 1 tbsp chives, chopped
  • 1/2 tsp Old Bay seasoning (optional)
  • Salt and pepper, to taste
  • 4 brioche buns
  • 2 tbsp unsalted butter, softened
  • Optional: shredded lettuce for serving


Instructions

  1. In a medium bowl, combine chopped shrimp, mayonnaise, lemon juice, dill, chives, Old Bay (if using), salt, and pepper. Mix well and chill for 15-20 minutes.
  2. Slice brioche buns and spread softened butter on the insides.
  3. Toast the buns on a skillet or grill until golden brown and warm.
  4. Place optional shredded lettuce in each bun, then spoon shrimp mixture generously into each roll.
  5. Serve immediately with extra lemon wedges if desired.

Notes

  • Use freshly cooked shrimp for the best flavor.
  • Adjust seasoning to taste — add more lemon juice for extra brightness.
