Shrimp Rolls on Brioche Buns are a delicious twist on classic lobster rolls, made with tender shrimp tossed in a light, creamy dressing and served in buttery toasted brioche buns. Perfect for a quick lunch or casual summer meal.
Ingredients
- 1 lb cooked shrimp, peeled, deveined, and chopped
- 1/4 cup mayonnaise
- 1 tbsp fresh lemon juice
- 1 tbsp fresh dill, chopped
- 1 tbsp chives, chopped
- 1/2 tsp Old Bay seasoning (optional)
- Salt and pepper, to taste
- 4 brioche buns
- 2 tbsp unsalted butter, softened
- Optional: shredded lettuce for serving
Instructions
- In a medium bowl, combine chopped shrimp, mayonnaise, lemon juice, dill, chives, Old Bay (if using), salt, and pepper. Mix well and chill for 15-20 minutes.
- Slice brioche buns and spread softened butter on the insides.
- Toast the buns on a skillet or grill until golden brown and warm.
- Place optional shredded lettuce in each bun, then spoon shrimp mixture generously into each roll.
- Serve immediately with extra lemon wedges if desired.
Notes
- Use freshly cooked shrimp for the best flavor.
- Adjust seasoning to taste — add more lemon juice for extra brightness.
- Substitute fresh parsley for dill if preferred.
