Description

These Rotel-Spiced Sausage Cream Cheese Bites are a savory and creamy appetizer perfect for parties or snack time. Ground sausage is cooked and mixed with Rotel diced tomatoes, cream cheese, shredded cheddar, and spices, then wrapped in flaky crescent roll dough and baked to golden perfection. They offer a delightful combination of spicy, cheesy, and meaty flavors in every bite.

Ingredients

Scale

Sausage Mixture

  • 1 pound ground pork sausage
  • 1 (10 oz) can Rotel diced tomatoes with green chilies, drained
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper

Dough

  • 2 tubes refrigerated crescent roll dough or puff pastry sheets

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Cook Sausage: In a skillet over medium heat, cook the ground pork sausage until it is browned and fully cooked through, breaking it up into small pieces as it cooks. Drain any excess fat to keep the mixture from being too greasy.
  3. Prepare Filling: Stir in the drained Rotel diced tomatoes, softened cream cheese, shredded cheddar cheese, garlic powder, onion powder, and black pepper into the cooked sausage. Mix thoroughly until the filling is creamy and all ingredients are well combined. Remove from heat.
  4. Prepare Dough: Unroll the crescent roll dough and cut it into squares. If using crescent rolls with seams, pinch the edges together to seal to prevent filling leakage.
  5. Fill Dough Squares: Spoon about 1 tablespoon of the sausage and cheese mixture into the center of each dough square. Fold the edges around the filling, pinching them tightly to seal, and place each bite seam-side down on the prepared baking sheet.
  6. Bake: Bake in the preheated oven for 12–15 minutes, or until the dough is golden brown and cooked through.
  7. Cool and Serve: Let the bites cool slightly on the baking sheet before serving to avoid burns and to help the filling set.

Notes

  • You can prepare the filling ahead of time and refrigerate it for up to 24 hours, making party prep easier.
  • Puff pastry sheets can be used instead of crescent roll dough for a flakier, more delicate texture.
  • Serve these bites with ranch dressing or a spicy dipping sauce for added flavor and variety.
