Ingredients
Scale
Roasted Tomato Mixture
- 1 pint cherry tomatoes, halved
- 4 cloves garlic, peeled and left whole
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 1 tablespoon balsamic vinegar
- 1/4 cup chopped fresh basil
Bread and Toppings
- 1 baguette, sliced into 1/2-inch rounds
- 2 tablespoons olive oil (for brushing the bread)
- Optional: 1/4 cup crumbled feta or shaved Parmesan cheese
Instructions
- Preheat and Prepare Vegetables: Preheat your oven to 400°F (200°C). Arrange the halved cherry tomatoes and whole garlic cloves on a baking sheet, drizzle with 2 tablespoons of olive oil, and season with salt and black pepper.
- Roast the Tomatoes and Garlic: Roast in the oven for 20 to 25 minutes until the tomatoes are soft and slightly caramelized and the garlic cloves have become tender. Remove from oven and let cool slightly.
- Prepare Tomato Mixture: Finely chop the roasted garlic cloves. In a mixing bowl, combine the roasted tomatoes, chopped garlic, balsamic vinegar, and chopped fresh basil. Stir gently to incorporate all the flavors.
- Toast the Baguette Slices: Brush the baguette slices with olive oil and arrange them on a baking sheet. Bake at 400°F for 5 to 7 minutes or until the slices turn golden and crisp.
- Assemble Bruschetta Bites: Spoon the roasted tomato mixture evenly onto each toasted baguette round. If desired, sprinkle crumbled feta or shaved Parmesan on top.
- Serve: Enjoy the bruschetta bites warm or at room temperature, perfect for sharing as an appetizer or party snack.
Notes
- For extra flavor, rub a cut clove of raw garlic over each toasted baguette slice before adding the tomato topping.
- You can prepare the roasted tomato mixture up to a day in advance and refrigerate it. Assemble the bruschetta just before serving to keep the bread crisp.
