Description

A delicious and easy recipe featuring crispy roasted baby potatoes baked alongside a block of creamy feta cheese and fragrant garlic, seasoned with oregano and paprika for a flavorful and comforting side dish perfect for any meal.

Ingredients

Scale

Potatoes

  • 1 lb baby potatoes, halved

Cheese

  • 200g feta cheese block

Seasonings and Aromatics

  • 4 cloves garlic, peeled and smashed
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste

Garnish

  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to get it ready for roasting the potatoes and feta.
  2. Prepare Potatoes: Place the halved baby potatoes on a baking sheet. Drizzle them with olive oil and sprinkle with dried oregano, paprika, salt, and pepper. Toss everything together to ensure the potatoes are evenly coated with the seasoning and oil.
  3. Arrange Feta and Garlic: Create a space in the center of the baking sheet and place the block of feta cheese there. Scatter the smashed garlic cloves evenly around the potatoes on the baking sheet.
  4. Roast: Roast in the preheated oven for 35-40 minutes until the potatoes turn golden brown and crisp, and the feta cheese softens and develops a slightly browned top.
  5. Combine Ingredients: Carefully remove the baking sheet from the oven. Using a spoon, break up the softened feta cheese and mix it thoroughly with the roasted potatoes and garlic, allowing the cheese to melt into the potatoes for a creamy texture.
  6. Garnish and Serve: Garnish the dish with chopped fresh parsley if desired. Serve the roasted potatoes with baked feta warm as a flavorful side dish or light main course.

Notes

  • You can use red or white baby potatoes depending on preference.
  • Adjust the seasoning amounts to your taste, especially salt, as feta is naturally salty.
  • Fresh parsley adds a nice color contrast and freshness but can be omitted if unavailable.
  • To make it spicier, consider adding a pinch of chili flakes along with the paprika.
  • For extra creaminess, drizzle a bit more olive oil before serving.
