Description

These patriotic Red, White, and Blue Popsicles are a fun and refreshing treat perfect for summer holidays like the 4th of July. Made with layers of fresh fruit and yogurt, they’re both festive and healthy.

Ingredients

Units Scale
  • 1 cup strawberries, hulled and chopped
  • 1 tablespoon honey (optional)
  • 1 cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 cup blueberries
  • 1/4 cup water (divided)

Instructions

  1. Blend strawberries with 1–2 tablespoons of water and honey (if using) until smooth. Pour the mixture into popsicle molds, filling 1/3 of each mold. Freeze for about 30 minutes.
  2. Mix Greek yogurt with vanilla extract. Once the red layer is frozen, spoon the yogurt into the molds to fill the next third. Freeze for another 30 minutes.
  3. Blend blueberries with 1–2 tablespoons of water until smooth. Pour the blueberry mixture into the final third of each mold. Insert sticks and freeze until solid, at least 4 hours or overnight.
  4. To serve, run warm water over the molds for a few seconds to release the popsicles.

Notes

  • You can substitute coconut yogurt to make these vegan.
  • Adjust the sweetness of the fruit layers by adding more or less honey as desired.
  • Use fresh or frozen fruit depending on availability.
