Instructions
- Cook the Ravioli: Bring a large pot of salted water to a boil. Cook the ravioli according to package instructions until tender, then drain, reserving a little pasta water for later use.
- Sauté Garlic: While the ravioli cooks, heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, but not browned.
- Cook Asparagus: Add the trimmed asparagus pieces to the skillet and sauté for 3-4 minutes, or until they become tender yet retain a slight crispness.
- Add Tomatoes: Stir in the halved cherry tomatoes and cook them for an additional 2-3 minutes until they start to soften, releasing their juices.
- Season the Vegetables: Season the asparagus and tomatoes with salt, pepper, and the optional crushed red pepper flakes for a subtle heat. Adjust seasoning to taste.
- Toss Ravioli and Vegetables: Add the drained ravioli to the skillet with the vegetables. Gently toss to combine everything evenly. If the mixture seems dry, add a splash of the reserved pasta water to help create a light, silky sauce.
- Add Fresh Herbs: Stir in the freshly chopped basil and parsley, mixing well to distribute the herb flavor throughout the dish.
- Serve: Plate the ravioli and vegetable mixture and, if desired, sprinkle freshly grated Parmesan cheese on top before serving for an extra layer of savory flavor.
