Description

Pumpkin Pie Overnight Oats are a cozy, make-ahead breakfast that tastes like pumpkin pie but is packed with wholesome oats, creamy pumpkin puree, warm spices, and protein for a nourishing start to your day.

Ingredients

  • 1/2 cup old-fashioned rolled oats
  • 1/3 cup pumpkin puree
  • 1/2 cup milk (dairy or non-dairy)
  • 1/4 cup Greek yogurt
  • 1 tbsp chia seeds
  • 1-2 tbsp maple syrup (to taste)
  • 1/2 tsp vanilla extract
  • 1/2 tsp pumpkin pie spice
  • Pinch of salt

Instructions

  1. In a mason jar or airtight container, combine the oats, pumpkin puree, Greek yogurt, and chia seeds.
  2. Add the milk, maple syrup, vanilla extract, pumpkin pie spice, and a pinch of salt.
  3. Stir well until fully mixed and smooth.
  4. Seal the container and refrigerate overnight or at least 4 hours.
  5. In the morning, stir and add a splash of milk if needed to loosen the texture.
  6. Top with granola, toasted nuts, or whipped cream for extra pumpkin pie flavor.

Notes

  • Swap Greek yogurt for coconut yogurt for a dairy-free version.
  • Add a scoop of protein powder for extra protein.
  • Top with toasted pecans or walnuts for crunch.
  • Mix in raisins or dried cranberries for added sweetness.
  • Store in the fridge for up to 4 days; enjoy cold or gently warmed.
