- 2 cups liquid egg whites
- 1/2 cup diced bell peppers
- 1/2 cup chopped spinach
- 1/4 cup diced onions
- 1/4 cup low-fat shredded cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil (for greasing muffin tin)
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a muffin tin with olive oil.
- In a large bowl, mix the egg whites, bell peppers, spinach, onions, salt, and pepper.
- Pour the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
- Top each with a sprinkle of shredded cheese.
- Bake for 20-25 minutes or until the egg whites are set and slightly golden on top.
- Allow to cool slightly before removing from the muffin tin.
- Serve immediately or store in the refrigerator for up to 5 days.
Notes
- You can add other vegetables or cooked lean meats for variety.
- These bites freeze well; reheat in the microwave for a quick snack.
- Use silicone muffin cups for easier removal.
