Description

Protein Egg White Bites are a healthy, low-calorie, high-protein snack or breakfast option, perfect for meal prep and on-the-go meals.


Ingredients

  • 2 cups liquid egg whites
  • 1/2 cup diced bell peppers
  • 1/2 cup chopped spinach
  • 1/4 cup diced onions
  • 1/4 cup low-fat shredded cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil (for greasing muffin tin)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a muffin tin with olive oil.
  2. In a large bowl, mix the egg whites, bell peppers, spinach, onions, salt, and pepper.
  3. Pour the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
  4. Top each with a sprinkle of shredded cheese.
  5. Bake for 20-25 minutes or until the egg whites are set and slightly golden on top.
  6. Allow to cool slightly before removing from the muffin tin.
  7. Serve immediately or store in the refrigerator for up to 5 days.

Notes

  • You can add other vegetables or cooked lean meats for variety.
  • These bites freeze well; reheat in the microwave for a quick snack.
  • Use silicone muffin cups for easier removal.
