Description

Potsticker Soup is a cozy and flavorful dish with tender dumplings, savory broth, and fresh vegetables, ready in under 30 minutes — perfect for busy weeknights.


Ingredients

  • 6 cups chicken or vegetable broth
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp fresh ginger, minced
  • 2 cloves garlic, minced
  • 3 green onions, sliced
  • 2 medium carrots, thinly sliced
  • 2 cups baby spinach or napa cabbage, chopped
  • 1 cup mushrooms, sliced
  • 16 frozen or homemade potstickers (pork, chicken, or vegetable)
  • Optional toppings: chili oil, cilantro, lime wedges


Instructions

  1. In a large pot, heat sesame oil over medium heat.
  2. Add minced garlic and ginger; sauté for about 1 minute until fragrant.
  3. Pour in the broth and bring to a gentle boil.
  4. Add soy sauce, carrots, and mushrooms; simmer for 5-7 minutes until vegetables are tender.
  5. Add potstickers to the simmering broth and cook according to package instructions, about 5-8 minutes.
  6. Stir in baby spinach or napa cabbage and cook until just wilted.
  7. Ladle soup into bowls and garnish with sliced green onions and optional toppings like chili oil, cilantro, or lime wedges.
