Description
A tropical Pineapple Shrimp Luau featuring juicy shrimp, sweet pineapple, and colorful veggies stir-fried in a tangy sauce. Perfect for a Hawaiian-inspired meal.
Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 cups fresh pineapple chunks
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, sliced
- 2 tbsp vegetable oil
- 2 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tbsp brown sugar
- 1 tbsp rice vinegar
- 1 tbsp cornstarch mixed with 2 tbsp water
- 2 green onions, sliced (for garnish)
- 1 tbsp sesame seeds (optional, for garnish)
- Cooked rice, for serving
Instructions
- In a small bowl, mix soy sauce, brown sugar, and rice vinegar. Set aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add garlic and sliced onion; stir-fry for 2 minutes until fragrant.
- Add red and green bell peppers and cook for another 3 minutes.
- Add shrimp and cook until pink and opaque, about 3-4 minutes.
- Add pineapple chunks and pour in the sauce. Stir well to combine.
- Add the cornstarch slurry and cook until the sauce thickens, about 2 minutes.
- Remove from heat, garnish with green onions and sesame seeds if desired.
- Serve hot over cooked rice.
Notes
- You can substitute canned pineapple if fresh is unavailable.
- Adjust the sweetness by adding more or less brown sugar to taste.
- Serve with jasmine or coconut rice for extra flavor.
