Description

A tropical Pineapple Shrimp Luau featuring juicy shrimp, sweet pineapple, and colorful veggies stir-fried in a tangy sauce. Perfect for a Hawaiian-inspired meal.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 2 green onions, sliced (for garnish)
  • 1 tbsp sesame seeds (optional, for garnish)
  • Cooked rice, for serving


Instructions

  1. In a small bowl, mix soy sauce, brown sugar, and rice vinegar. Set aside.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add garlic and sliced onion; stir-fry for 2 minutes until fragrant.
  4. Add red and green bell peppers and cook for another 3 minutes.
  5. Add shrimp and cook until pink and opaque, about 3-4 minutes.
  6. Add pineapple chunks and pour in the sauce. Stir well to combine.
  7. Add the cornstarch slurry and cook until the sauce thickens, about 2 minutes.
  8. Remove from heat, garnish with green onions and sesame seeds if desired.
  9. Serve hot over cooked rice.

Notes

  • You can substitute canned pineapple if fresh is unavailable.
  • Adjust the sweetness by adding more or less brown sugar to taste.
  • Serve with jasmine or coconut rice for extra flavor.
