Ingredients
Scale
Bread
- 1 fresh baguette (cut into 4 pieces or halved lengthwise)
Spread
- 1/4 cup basil pesto (store-bought or homemade)
Cheese and Toppings
- 4 slices sharp white cheddar cheese
- 1–2 ripe tomatoes, sliced
- 1 tablespoon olive oil
- salt and black pepper to taste
- fresh basil leaves (optional)
- arugula or baby spinach (optional)
Instructions
- Prepare the Bread: Slice the baguette pieces in half lengthwise to create a top and bottom. Drizzle the cut sides lightly with olive oil to enhance browning.
- Toast the Baguette: Using a skillet or placing under the broiler, toast the baguette halves until golden and crisp, about 3-5 minutes. Keep an eye to avoid burning.
- Apply Pesto: Spread a generous layer of basil pesto evenly on the bottom half of each toasted baguette piece to infuse rich herbaceous flavor.
- Layer Cheese and Tomato: Add the slices of sharp white cheddar on top of the pesto, then layer on the ripe tomato slices. Lightly season the tomatoes with salt and freshly ground black pepper to taste.
- Add Greens (Optional): Place fresh basil leaves or a handful of arugula or baby spinach over the tomato slices for added freshness and a peppery bite.
- Assemble and Serve: Close each sandwich with the top half of the baguette. Slice if desired and serve immediately, or wrap tightly to pack for lunch.
Notes
- For a melty version, grill the sandwich in a panini press or skillet until cheese is melted and bread is golden.
- Swap out the sharp cheddar for mozzarella or provolone for a milder cheese profile.
- This sandwich can be enjoyed warm or cold, making it versatile for on-the-go meals.
