Description

Patriotic Jello Cookies are festive, soft sugar cookies infused with red, white, and blue gelatin flavors, perfect for celebrating the 4th of July or any patriotic holiday.


Ingredients

  • 3/4 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 package (3 oz) red Jello (e.g., cherry or strawberry)
  • 1 package (3 oz) blue Jello (e.g., berry blue)
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • Additional red and blue Jello powder for rolling (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until combined.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Divide the dough evenly into two bowls. Add red Jello to one and blue Jello to the other, mixing well until fully colored and flavored.
  6. Scoop out 1-inch portions of dough and roll into balls. Optionally, roll in additional Jello powder for extra color.
  7. Place dough balls on prepared baking sheet about 2 inches apart. Flatten slightly with the bottom of a glass.
  8. Bake for 8-10 minutes or until edges are set. Do not overbake.
  9. Allow cookies to cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • You can use sugar instead of Jello powder for rolling if a subtler flavor is desired.
  • For a marbled effect, mix small portions of red and blue dough together before baking.
  • Store in an airtight container for up to a week.
