Ingredients
- 1 (4–6 lb) bone-in, skin-on turkey breast
- 2 tbsp olive oil or melted butter
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme or rosemary
- 1/2 tsp paprika
- 1 lemon, halved
- Fresh herbs (optional): thyme, rosemary, sage
Instructions
- Preheat oven to 375°F (190°C). Pat turkey breast dry with paper towels.
- In a small bowl, mix olive oil (or butter) with salt, pepper, garlic powder, onion powder, thyme, and paprika.
- Rub the seasoning mixture all over the turkey breast, including under the skin if possible.
- Place lemon halves and optional fresh herbs in a roasting pan or under the turkey rack.
- Place turkey breast skin-side up on a rack in the pan. Roast uncovered for 1 hour 30 minutes to 2 hours, or until internal temperature reaches 165°F (74°C) in the thickest part.
- Let turkey rest for 15 minutes before slicing to retain juices.
Notes
- Use a meat thermometer to ensure perfectly cooked turkey without overbaking.
- For extra crispy skin, broil the last 3–5 minutes—watch carefully.
- Leftovers make excellent sandwiches or salads.
