Description

These oven baked chicken legs are crispy on the outside, juicy on the inside, and full of delicious flavor. Perfect for an easy weeknight dinner or meal prep.


Ingredients

  • 8 chicken drumsticks
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or foil and place a wire rack on top.
  2. Pat the chicken legs dry with paper towels.
  3. In a large bowl, mix the olive oil, salt, pepper, garlic powder, onion powder, paprika, and thyme.
  4. Add the chicken legs to the bowl and toss until they are evenly coated with the seasoning mixture.
  5. Place the chicken legs on the wire rack in a single layer, leaving space between them.
  6. Bake for 35–40 minutes, flipping halfway through, until the skin is crispy and the internal temperature reaches 165°F (74°C).
  7. Remove from the oven and let rest for 5 minutes before serving.

Notes

  • For extra crispiness, broil the chicken legs for the last 2-3 minutes of baking.
  • You can marinate the chicken in the seasoning for a few hours or overnight for deeper flavor.
  • Adjust spices to your preference—add cayenne for heat or lemon zest for brightness.
