  • 12 oz (340g) smoked kielbasa, sliced into 1/2-inch rounds
  • 1 lb (450g) baby red or Yukon gold potatoes, cut into bite-sized pieces
  • 1 cup (150g) green beans, trimmed
  • 1 large (150g) bell pepper, sliced into strips
  • 1 medium (100g) onion, sliced

Seasonings and Oil

  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper

Optional Garnish

  • 1 tbsp fresh parsley, chopped


Instructions

  1. Prepare the Ingredients: Wash and cut the potatoes into bite-sized pieces. Slice the kielbasa into 1/2-inch rounds. Trim the ends of the green beans and slice the bell pepper and onion into strips.
  2. Combine and Season: In a large mixing bowl, combine the potatoes, kielbasa, green beans, bell pepper, and onion. Drizzle with olive oil and sprinkle paprika, garlic powder, salt, and black pepper. Toss well to coat evenly.
  3. Cook the Dish – Oven Method: Preheat the oven to 400°F (200°C). Spread the mixture evenly on a large baking sheet. Roast for 25-30 minutes, stirring halfway through, until the potatoes are tender and golden brown, and the kielbasa is nicely browned.
