Instructions
- Combine dry ingredients: In a large mixing bowl, add the oats, ground flaxseed, pumpkin pie spice, and cinnamon. Stir these together until evenly mixed to create the base for your energy balls.
- Add wet ingredients: Add the almond butter, pumpkin puree, honey or maple syrup, and vanilla extract to the dry mixture. Stir thoroughly until all ingredients are well combined and the mixture becomes sticky enough to hold together.
- Fold in chocolate chips: If using, gently fold in the mini chocolate chips to evenly distribute them without breaking them up.
- Form the balls: Using your hands or a small cookie scoop, shape the mixture into bite-sized balls, about 1 inch in diameter.
