This No Bake Banana Pudding Cheesecake is a creamy and indulgent dessert combining the classic flavors of banana pudding and cheesecake without the need for baking. Layered with fresh bananas, vanilla wafers, and a smooth cream cheese filling in a graham cracker crust, it’s an easy-to-make treat perfect for any occasion. Chill for a few hours for a perfectly set, luscious dessert that’s ready to impress!

Ingredients

Scale

Crust

  • 1 graham cracker crust

Filling

  • 8 oz cream cheese, softened
  • 1/3 cup sugar
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • 1 package Instant Vanilla pudding mix (3.4 oz)
  • 1 cup milk

Toppings and Layers

  • 2 bananas, sliced
  • 20-30 vanilla wafers

Instructions

  1. Beat the cream cheese: In a medium bowl, beat the softened cream cheese with a hand mixer until smooth and creamy.
  2. Add sugar: Incorporate the sugar into the cream cheese and continue beating until fully combined and smooth.
  3. Whip heavy cream and vanilla: Pour in the heavy cream and vanilla extract, then beat until medium peaks form. Set this whipped mixture aside.
  4. Prepare pudding: In a small bowl, whisk together the milk and instant vanilla pudding mix until smooth and lump-free.
  5. Chill pudding mixture: Place the pudding mixture in the refrigerator for 3-5 minutes to thicken slightly.
  6. Combine mixtures: Fold the chilled pudding mixture into the cream cheese mixture carefully to incorporate without deflating the whipped cream.
  7. Assemble first layer: Pour half of the combined filling into the graham cracker crust and smooth it evenly.
  8. Add banana and wafer layer: Place a layer of sliced bananas and vanilla wafers evenly on top of the filling.
  9. Finish filling layer: Pour the remaining filling over the bananas and wafers and smooth the top.
  10. Decorate the top: Arrange additional vanilla wafers on the top in your desired pattern. Avoid adding bananas on top at this point to prevent browning.
  11. Chill the cheesecake: Refrigerate the cheesecake for at least 3 hours to allow it to set properly.
  12. Add fresh bananas and serve: Just before serving, optionally add fresh banana slices on top for extra flavor and garnish. Enjoy your no-bake banana pudding cheesecake!

Notes

  • Do not add banana slices on top of the cheesecake until serving to avoid browning.
  • If you want a firmer crust, you can pre-chill the graham cracker crust before assembling.
  • Use fresh bananas for the best flavor and texture.
  • You can substitute heavy cream with whipping cream if needed, but heavy cream yields better peaks.
  • For a lighter version, use low-fat cream cheese and reduce sugar slightly.
