Instructions
- Sauté Mushrooms: In a large pan, melt 1 tablespoon of butter with 1 tablespoon of olive oil over medium-high heat. Add half of the minced garlic and sauté until fragrant. Add the sliced cremini mushrooms and cook for about 8 minutes until they are caramelized golden brown. Remove from pan and set aside.
- Cook Onions and Garlic: In the same pan, heat the remaining 1 tablespoon of butter and 1 tablespoon of olive oil. Add the diced yellow onion and cook until soft and translucent. Stir in the remaining garlic and cook briefly until fragrant, about 30 seconds.
- Toast Rice: Add the uncooked long-grain rice, fresh thyme, salt, and black pepper to the pan with the onions and garlic. Toast the rice for about 30 seconds, stirring constantly to coat grains with the flavorful fat and aromatics.
- Deglaze Pan: Pour in ½ cup of the broth to deglaze the pan, scraping up any browned bits stuck to the bottom with a wooden spoon for extra flavor.
- Simmer Rice: Add the remaining broth to the pan. Reduce heat to low and cover the pan with a tight-fitting lid. Allow the rice to simmer gently for 15 to 17 minutes, or until the liquid is fully absorbed and the rice is tender.
- Combine and Rest: Remove the pan from heat and stir in the sautéed mushrooms and chopped green onions. Cover again and let the rice sit undisturbed for 10 minutes to finish cooking and absorb flavors fully before serving.
