A nutritious and filling baked oatmeal recipe made with mixed berries and protein powder, perfect for a healthy breakfast or snack.
Ingredients
- 2 cups rolled oats
- 1 cup mixed berries (fresh or frozen)
- 2 scoops vanilla protein powder
- 2 cups unsweetened almond milk
- 2 large eggs
- 1/4 cup maple syrup or honey
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
Instructions
- Preheat the oven to 350°F (175°C) and lightly grease a baking dish.
- In a large bowl, mix together the oats, protein powder, baking powder, cinnamon, and salt.
- In a separate bowl, whisk the almond milk, eggs, maple syrup, and vanilla extract.
- Combine the wet and dry ingredients, then fold in the mixed berries.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 35–40 minutes or until the top is golden brown and the center is set.
- Let cool for a few minutes before slicing and serving.
Notes
- Use any combination of berries such as blueberries, raspberries, or strawberries.
- Can be stored in the fridge for up to 5 days or frozen for longer storage.
