Description

A delightful Mixed Berry Crisp featuring a juicy blend of strawberries, blueberries, raspberries, and blackberries, topped with a buttery oat crumble. This easy-to-make dessert is perfect served warm with ice cream or whipped cream, offering a sweet and tangy flavor that captures the essence of summer.

Ingredients

Scale

Berry Filling

  • 4 cups mixed berries (such as strawberries, blueberries, raspberries, and blackberries)
  • ¼ cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Topping

  • ¾ cup old-fashioned oats
  • ½ cup all-purpose flour
  • â…“ cup brown sugar
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon
  • 6 tablespoons cold unsalted butter, cut into small cubes

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to get it ready for baking the crisp.
  2. Prepare Berry Mixture: In a large bowl, gently toss the mixed berries with granulated sugar, cornstarch, lemon juice, and vanilla extract until well combined.
  3. Transfer to Baking Dish: Pour the berry mixture into a greased 8×8-inch baking dish, spreading it evenly.
  4. Make the Topping: In another bowl, combine oats, flour, brown sugar, salt, and cinnamon. Add the cold cubed butter and blend it using your fingers or a pastry cutter until the mixture turns into coarse crumbs.
  5. Assemble Crisp: Evenly sprinkle the oat topping over the berry mixture in the baking dish, covering the berries completely.
  6. Bake: Bake in the preheated oven for 35–40 minutes or until the topping is golden brown and the berry filling is bubbling around the edges.
  7. Cool and Serve: Remove from the oven and let the crisp cool for 10–15 minutes before serving. Serve warm, optionally with vanilla ice cream or whipped cream.

Notes

  • You can use fresh or frozen berries—no need to thaw frozen berries before baking.
  • Serve warm with vanilla ice cream or whipped cream for an extra indulgent touch.
  • For added crunch and flavor, sprinkle chopped nuts such as pecans or walnuts into the topping mixture.
