Description

A refreshing and healthy Mediterranean Quinoa Salad packed with colorful vegetables, fresh herbs, and a zesty lemon dressing, perfect for a light meal or side dish.


Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup Kalamata olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh mint, chopped
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste

Instructions

  1. In a medium saucepan, bring quinoa and water or broth to a boil. Reduce heat, cover, and simmer for 15 minutes or until quinoa is tender and water is absorbed. Let cool.
  2. In a large bowl, combine the cooled quinoa, cherry tomatoes, cucumber, red onion, olives, feta cheese, parsley, and mint.
  3. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
  4. Pour the dressing over the salad and toss to combine.
  5. Chill for at least 30 minutes before serving for best flavor.

Notes

  • For a vegan version, omit the feta cheese or use a plant-based alternative.
  • Add chickpeas for extra protein.
  • Use fresh lemon juice for the best flavor.
