Ingredients
- 4 boneless, skinless chicken breasts or thighs
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 3/4 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/3 cup sun-dried tomatoes, chopped
- 1/2 tsp red pepper flakes (optional)
- 1/2 tsp dried thyme or Italian seasoning
- Fresh basil or parsley for garnish
Instructions
- Season chicken with salt and pepper.
- In a large skillet over medium-high heat, heat olive oil. Sear chicken 4–5 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, add garlic and sauté for 30 seconds.
- Add chicken broth and deglaze the pan, scraping up brown bits.
- Stir in heavy cream, Parmesan, sun-dried tomatoes, red pepper flakes, and thyme. Simmer for 3–4 minutes until slightly thickened.
- Return chicken to skillet, spoon sauce over top, and simmer another 2–3 minutes.
- Garnish with fresh basil or parsley and serve hot over pasta, mashed potatoes, or rice.
Notes
- Substitute half-and-half for a lighter version, or use coconut cream for dairy-free.
- Use boneless thighs for a juicier option.
- For a thicker sauce, simmer longer before returning chicken to the pan.
